Tough question about motor rebuilt

Hello,
My crf250r 2004 was just rebuilt, almost all the motor, $2000 USD was the cost of the repair. I did the break in drive, it has now about 2 hours since the rebuilt, I changed oil and oil filter. My only concern is that I am not completely sure the mechanic did the rebuilt correctly. (I don“t have experience on 4-stroke bikes). The mechanic took 4 months for the rebuilt and had a few problems, he had to buy new valves twice. How can I know if the motor is adjusted and built correctly, in my opinion it ran great the 2 hours. If it was a bad built would I had noticed a problem already? It is very difficult to start when it is cold, when it is warm it starts first kick.
