Welcome to the site, Phil. Not only turn the fuel off, but either drain the float bowl or run it for a bit to lower the fuel level if it's going to sit for a while. Be careful not to overheat if you employ the run version. The gas today really gums up fast. We see a lot of clogged pilot jets from that.

 If your going to be riding your bike a lot and use a stand that keeps it upright and run good gas you CAN leave it on, I do and I don't have to do anything but kick and go! If it leans over it will drain out, it has to be flat on a stand. But its up to you, I run 50/50 racegas/pump and have never had any gumming problems. Guess its person choice.
